Choline and especially Phospholipid Choline is considered an essential nutrient and is one of the few nutrients allowed by the Food and Drug Administration and European Food Safety Authority to make health claims. When the body is calling for a choline source it will sacrifice phosphatidylcholine by removing the two fatty acids (lipids) to create GPC (Glycero Phospho Choline), which is the water-soluble head group (phosphorus, choline, glycerol backbone) of the phosphatidylcholine molecule. The GPC molecule is then further broken down to make choline available for acetylcholine synthesis and neurotransmission.
Choline, phosphatidylcholine (PC) and Glycerophosphocholine (GPC) are in a constant state of flux, forming and reforming, and working synergistically to keep our 50 trillion plus cells metabolically stable and functioning properly.
